Easy Cinnamon Rolls

Mornings should start like this more frequently. When I woke up, it was so dark I thought it was still the middle of the night. Turns out it was already 7:30, and it was time to get the day going.

Good thing I’ve been prepared for these for a while. I bought the Trader Joe’s Cinnamon Bun Spread a while back, but hadn’t quite been sure what to do with it. I guess the best purpose is using it as a shortcut to actual cinnamon rolls.

I started with a tube of croissants and pressed each section of four triangles together on the perforations to form a full rectangle. Then I slathered on a thin layer of the spread, rolled, and cut into three each.

In a cast iron, these baked at 350ºF for about 16 minutes, just until the tops were golden and the filling was bubbling. I topped with more spread with some mix-ins for texture and flavor.

For the topping:

  • 2 Tbsp. Cinnamon Bun Spread

  • ¼ cup pecans halves, roughly chopped

  • ½ tsp. orange zest

  • ½ tsp. vanilla extract

  • Splash of orange juice

Serve warm next to a good cup of coffee and head back to bed. That’s how you start a rainy Sunday morning.
